The city’s first Chipotle Mexican Grill is now expected to open Dec. 9, a company spokeswoman said.

The Chipotle sign went up Oct. 18 at the Crossroads Center with an original estimated opening in late November.

“The latest I have is Dec. 9 now,” Chipotle spokeswoman Regina Wu said.

All Chipotle outlets are company-owned stores, not franchises.

Chipotle promotes itself as “serving responsibly sourced, classically cooked real food with wholesome ingredients without artificial colors, flavors or preservatives.” Chipotle serves burritos, bowls, tacos and salads.

Founded in Denver in 1993, Chipotle has more than 2,500 restaurants but made a late entry into New Mexico in 2011. Chipotle’s corporate headquarters moved to Newport Beach, Calif., in 2018.

The Santa Fe store at the busy intersection of Cerrillos Road and St. Francis Drive will be the ninth Chipotle in New Mexico. The others are in Albuquerque, Clovis, Farmington and Las Cruces.
