Vegetables have long been the focus of farmers markets for countless communities, including Santa Fe. These markets have brought attention to produce now sometimes found at general supermarkets and done much to stimulate a renaissance of sorts in small farming. But today it’s meat’s turn to come to the fore.
Go to the Santa Fe Farmers Market and you’ll find it’s possible to bring home beef, pork, yak, bison, lamb, chicken (including the amazing Label Rouge birds) and rabbit, along with vegetables, breads, cheeses, goat’s milk, raw milk, chiles, herbs, eggs and so very much more. The quality of the meat is generally high, though variable; that it’s available here is something a great many people appreciate.
