Native American cooking class

Slow Food Santa Fe presents a hands-on class with New Mexico chefs Lois Ellen Frank and Walter Whitewater of Red Mesa Cuisine, using local, sustainable ingredients. A three-course lunch follows and includes Local Baby Greens and Sprout Salad with Sweetwood Diary Goat's Cheese and New Mexico Spicy Pecans in a Raspberry Vinaigrette; Roasted Zucchini with Diced Tomatoes and Ground Pepita Seeds; Picuris Bison-Stuffed Green Chile with Lois' Garden Tomato Sauce and Sautéed Potatoes with Rosemary; Flourless Chocolate Piñon Torte with Santa Fe Farmer's Market Peach Honey and Hand-Gathered Prickly Pear Syrup; and Cota Indian Iced Tea. Guest chef at Pranzo Italian Grill

Sometimes, too many chefs in the kitchen can lead to wonderful surprises. Christine Hickman, chef, baker, caterer and owner/lead instructor of the Sono Carmelo cooking school in Perugia, Italy, joins the Pranzo kitchen staff for two evenings filled with authentic Italian comfort foods.

Special dishes available Friday include Grilled Lamb Loin Chops with Olive-Mint Pesto; Asparagus & Prosciutto Bundles with Parmigiano-Reggiano Shavings and Bruschette with Herbed Oil. On Saturday, Hickman whips up Beef Tagliata (Tenderloin) on Arugula with Parmigiano-Reggiano Shavings; Roasted Red Bell Peppers with Capers & Balsamic Vinaigrette; and Bruschette with Herbed Oil.

Hickman might even be convinced to stroll by your table —
in lieu of being serenaded by her, you might just ask Hickman for her Seared Pork Bocconcini with Mostarda recipe. Pranzo Italian Grill is at 540 Montezuma Ave. in Sanbusco Center. Call 984-2645 for reservations.

House-made corned beef

Having guests over for St. Patrick's Day but don't have the luck of the Irish in the kitchen? Whole Foods Market is still taking orders for its house-made corned beef. Call 992-1700 and ask for the meat department to place your order. And hurry!
